Thanksgiving

November 25, 2010 - Although like most holidays, when we'd rather be home with our family and close friends, we spent another year here in Nebraska but made the best of it with good friends. Our neighbor and friend, Takako, came over with her daughter, Sakura. Her husband Josh would have been with us, but he will be returning soon from Iraq. 

Our intimate Thanksgiving dinner included delicious potato chowder with ham, shredded cheese, and green onions (from Takako) and simple side dishes like green beans, creamed corn, stuffing, gravy, rolls, and cranberry sauce. With only three adults and three children, we figured keeping dinner simple would be best. My yummy deluxe macaroni and cheese, green bean casserole, garlic mashed potatoes, or green beans with bacon and onions can be made at another time.. maybe even for Christmas! For dessert, we had a cinnamon apple supreme pie (given to us from Village Inn) and Takako's banana and strawberry cream jelly roll cake! We also snacked on some dark chocolate chip cookies I made throughout the day. And of course, we did have Filipino food, pancit and lumpia, which we ate for lunch!
